Spicy Grilled Steaks

  • Boneless beef steak (sirloin), should be 1 inch thick-1 ½ lbs.
  • Soya sauce – ¼ cup
  • Lemon juice – 2 tablespoons
  • Cumin – 1 teaspoon
  • Vegetable oil-1tablespoon
  • Well chopped garlic-1 clove
  • Chili powder-1 teaspoon

Take a fork and prick the steak from both sides. Put all ingredients in a bowl; mix them well, add steak and cover it well with the marinade. Refrigerate it from 6 to 24 hours, turning the steak a few times. Grill it on coals or gas grill, keeping the grilling time 18 to 20 minutes. Once done, cut the beef into ½ inch pieces along the grains.




Grilled Turkey Nuggets

  • Bread crumbs-1 ½ cups
  • Parmesan cheese-1/4 cup
  • Fresh parsley-1 tb spoon
  • Pepper-1/4 teaspoon
  • Turkey breast pieces (1 1/2 inch cubes) – 1 ½ pound
  • Eggs-2
  • Barbeque sauce if required

Make a mixture of bread crumbs, parsley, pepper and cheese. Beat the eggs, coat turkey pieces first with eggs, then with crumbs mixture, and finally coat again with eggs. Put all pieces on a plate, and refrigerate for 1 to 4 hours. Grill it on coals or gas grill for 15 minutes, keeping it 4 to 6 inches from heat. Turn the nuggets a few times, and remove them from the heat when the center is no longer pink. You can serve the nuggets with any sauce.

Grilled Salmon and Cucumber Relish

For cucumber relish

  • Chopped cucumber-1
  • Chopped red onion-2 tablespoons
  • Water-2tbspoons
  • White vinegar-2 tablespoons
  • Sugar-1 teaspoon
  • Salt-1/2 teaspoon

For fish:

  • One salmon fillet- (about 2 lbs.)
  • Vegetable oil-2 tablespoons
  • Pepper-1/4 teaspoon
  • Salt-1/2 teaspoon
  • Chopped parsley-2 tablespoons

For cucumber relish, make a mixture of onion, cucumber, vinegar, sugar, salt and water; refrigerate it for 1 to 24 hours.  Prepare coals or gas grill, brush the fish with vegetable oil, pepper and salt, wrap it in foil. Grill it for 20 to 30 minutes, keeping it 4 to 6 inches from medium heat. When you can easily flake it with fork, remove it from grill. Serve it with cucumber relish.

Every vegetable needs different grilling time; so to make grilling easier for you, I am giving you the list of vegetables and their grilling time.

10 minutes for:

  • Carrots, small whole, partially cooked, i.e. cook it in boiling water for 5 to 10 minutes before grilling.
  • Cherry tomatoes, whole
  • Mushrooms, whole
  • Onions, cut into 1-inch slices
  • Potatoes, cut into 1-inch wedges, partially cooked

15 minutes for:

  • Bell peppers cut into 1- inch strips
  • Eggplant, cut into ¾- inch slices
  • Green beans, whole
  • Patty pan squash, whole
  • Zucchini, cut into ¾-inch pieces

20 minutes for:

  • Asparagus spears, whole
  • Broccoli spear, cut in lengthwise in half
  • Cauliflowers cut in lengthwise in half
  • Corn on the cob, husked and wrapped in aluminum foil if desired

It’s very easy as all you need is a fresh herb that can enhance food’s flavor.

  • Olive Oil should be 8 tablespoons
  • Garlic oil 8 tablespoons
  • 2 tablespoons of any herb or a combination like, tarragon, dill rosemary, thyme, marjoram, oregano, or basil, all mixed together. You can use any herb available, but it should be fresh.
  • Salt to taste
  • Black pepper should be freshly ground

Mix oils, herbs, salt and pepper, then apply it to the vegetables with a brush. Leave it for two hours; in case of meat leave it for longer or overnight, refrigerating it. You can use the left over marinade while grilling. This marinade can be used for vegetables, beef, poultry and fish. You can marinate 2 to 3 pounds with it. If you don’t like garlic oil then use only olive oil.

Garlic oil

You can make garlic oil and store it for later use. See, below how you can make it at home.

  • One cup of olive oil.
  • 5 cloves of garlic that should be peeled

First of all you need to shred the cloves with knife, then take oil in a jar and put garlic in it, refrigerating this oil by covering properly. You can use it within two weeks; but make it at least two or three days before grilling the food.

Marinade tips

  • Always marinate food in a non-metal dish.
  • Acid marinades such as those with lemon juice and vinegar can react with some metals. like aluminum and causes off flavors in the food.
  • Over marinating cause mushy texture in the meat.

Weight loss recipe of Grilled chicken fajitas with plum sauce

  • About ¼ cup lime juice
  • 1 tablespoon of vegetable oil
  • 1 teaspoon of chili powder
  • I pound of boneless and skinless chicken breast cut into halves as 4×1/4-inch strips
  • 1onion of medium size, about ¼-inch slices
  • 8 tortillas made with flour
  • 1 cup of salsa
  • If required, ½ cup of guacamole


First mix lime juice along with oil and chili powder in a shallow dish that should be nonmetal.  Put chicken and onion in the mixture for coating.  Then, cover the dish and place it in refrigerator, the time can be from 1 hour to 24 hours.

The second step is to Heat coals or you can use gas grill, then take out chicken and onion from the marinade; you can keep the leftover marinade. Now grill the chicken and onion on a grill grate that should be greased, putting pieces 4 to 6 inches apart for 8 to 10 minutes. Keep on brushing chicken frequently with marinade, turning once, and repeat the process until chicken completely grilled. Remove the remaining marinade, and put one-eighth of grilled onion and chicken on tortillas. Then, Fold tortilla by overlapping both ends. You can use salsa for topping along with guacamole.

 Plum Sauce: 

  • 1 cup plums
  • 2 or 3 tablespoon brown sugar
  • 1 teaspoon honey
  • Salt and black pepper to taste


Boil plums in a pan with 2 cups of water until they become soft like puree.. Mix sugar in the puree until the sauce becomes thick. Then pour some salt and pepper as you want. You can also make this sauce using any other fruit including strawberry, cherries, or mangoes, etc. Likewise you can reduce the amount of sugar. In case of raw mangoes, boil them in water twice, removing water and then finally cook them in one cup of water, adding sugar, salt, and black pepper as required.

Weather factors: Grilling time vary with different climates and weather conditions. When grilling in cool and windy weather, use slightly longer heating times as well as higher heat to speed the cooking.

Charcoal readiness: in daylight coals are ready for grilling when they are about 80 percent ashy gray because bright red coals are too hot, black coals are too cool, and a mix of red and black coals give off uneven heat.

Microwave-to-grill-cooking: to speed up summer cooking, combine the talents of your grill with those of your microwave. As a general rule, microwave foods for half of their total microwave time if they are to finish cooking on the grill. Then, grill for half the time recommended in the grill recipe, using the doneness test from the recipe as the final guide.

Grilling sauces:  to prevent over browning or burning of meats, brush on sauces during the last 15 to 20 minutes of grilling, especially those that contain tomatoes or sugar.

Indirect grilling: it’s a process where food is cooked over a drip pan and not directly over the heat source. It’s a slow method of cooking because less heat is provided. Use it for large pieces of poultry, meat, fish or fatty foods to get more even cooking.

Grill baskets: a hinged wire grill basket is especially helpful for grilling delicate foods, such as fish and small pieces of foods, like cut-up vegetables. If you don’t have a grill basket, try improvising by wiring two metal cooking racks together.

Marinades: if you want to serve a leftover marinade or brushing sauce with the grill meat, heat it to boiling, then boil for one minute, stirring constantly. Boiling will destroy any bacteria that may have been transferred on the brush from the raw meat to the marinade, otherwise discard the sauce or marinade.

Skewers: Metal skewers that are a square shaped help keep food from turning or spinning when skewers are turned. If you are using bamboo or wooden skewers, be sure to soak them in water at least thirty minutes before using them to prevent brushing.

Flavor enhances: Enhance the grilled flavor of foods by adding aromatic wood chips to the fire or heat source. Soak wood chips in water for at least thirty minutes, then drain and scatter on hot coals or lava rocks. A handful of chips would be enough, but the amount can be adjusted according to the package directions and personal preference.
